Mushroom Study Finds Positive Anti-Breast Cancer Benefits
A study led by researchers at City of Hope, just published today in Cancer Research, reports that white button mushrooms can help prevent breast cancer by suppressing estrogen production in the body.

Since about 60 percent of premenopausal women and 75 percent of postmenopausal women have breast cancers that need estrogen to grow, controlling estrogen levels can help limit or prevent cancer growth. The effect is greater in postmenopausal women because they have lower circulating estrogen levels, and their estrogen production is controlled locally by tissues rather than by their brains.

The researchers found that out of seven vegetable extracts, mushrooms had the most effective anti-aromatase effect due to one phytochemical: conjugated linoleic acid. Celery was found to have a moderate effect, and green onion, carrot, bell pepper, broccoli and spinach extracts did not have a significant effect on reducing aromatase levels. The group then tested other mushrooms and found that while white stuffing mushrooms had the strongest effect, shiitake, white button, portobello, crimini and baby button mushrooms also had significant inhibitory effects on aromatase, even when cooked.

They were surprised to find that mushrooms contain conjugated linoleic acid, a compound that has previously been found to have anticancer properties, because it is mainly present in animal-based foods. After confirming the presence of anti-aromatase chemicals in white button mushrooms, the researchers used laboratory and mouse studies to confirm that the anti-aromatase compounds stopped the growth of breast cancer cells. They found that mice that were fed mushroom extract had a 58 percent reduction in breast tumor growth.

    Hungarian Beef Goulash and Spätzle

    Brrrr ... it's pretty cold out there. Talk about a need for comfort food. This week we "stole" a native Hungarian dish popular in central Europe - the goulash. Hungarian goulash is very different from American goulash, often the only resemblance is the usage of beef and tomatoes. For those who don't know what goulash is, it's a rich stew but low maintenance so you can focus on keeping your toes toasty. The recipe calls for Hungarian paprika which is stronger and spicier than the paprika that's common in most grocery stores, but it's worth the extra effort. Unlike American goulash which usually uses hamburger meat this recipe uses shin meat which has more flavor and results in a thicker soup. You can serve your goulash over rice, pasta or even buttered noodles but we love Chef Kurt Gutenbrunner's spätzle, literally translated from German to mean "little sparrow." It's homemade pasta or noodles, depending on how you shape it. If you have leftovers, spätzle's delicious pan-fried with some butter and onions.

    My dogs are members of my family and I love them just the same. They are there everyday with unconditional companionship and I try to give them the best life has to offer. But am I showing enough concern about what they eat? After being bombarded with literature from the Natura Pet Products I wasn't so sure.

    Natura, of Santa Clara, California, sent me so much information on their pet food that I felt like I earned a degree in dog foodology. After reading through all the literature I would sum it up like this. The folks at Natura seem like caring pet lovers that strive to make the healthiest food and treats for cats and dogs. They have a research center that sounds like Club Med for animals. Some of the animals that live there have been rescued and I think that's wonderful. None of the research residents are harmed ... in fact far from it. The animals appear to live in the lap of luxury. Everything from toys, pools, treats, to hotel-like accommodations in some cases is provided.
